Priprema

Ingredients for 4 people:

• 1,2 Kg of moray cut in slices

• 1,2 Kg of onions

• Olive Oil

• 1/2 glass of vinegar

• 2/3 spoons of sugar

• Salt and pepper to taste

Cut the moray in slices, discarding the last part of the tail.
Salt to taste and put it in the fridge for one hour.
Fry the slices in boiling olive oil.
In the mean time, cut your onions in thin slices and, in other pan, let them slowly brown in oil.
Once they are cooked, add some salt, sugar and vinegar and let them caramelize.
Put your fried moray in an oven pan and cover it with the onions.
Let it stand and serve cold…with a glass of wine !

Priprema

Ingredients for 4 people:
• One octopus
• One pound of potatoes
• Paprika
• One onion
• Salt
• Extra virgin oil

Wash and peel the potatoes, cut them in halves and put them aside.
Fill a pot with water, peel the whole onion, put it in the water and bring to boil.
Take your locally-caught octopus and boil it for around 45 minutes over medium heat. Prick it from time to time to check how hard it is.
When the octopus is done, remove from the boiling water, place in a platter and let it cool.
Add the potatoes to that same boiling water (so that it takes the flavour of the octopus) and boil for another 15 minutes.
Use some scissors or a sharpen knife to cut the legs and head of the octopus in small pieces.
Place the potatoes on a wooden platter and the octopus on top of the potatoes.
Finally, add a pinch of sea salt, paprika, and a splash of olive oil!

Priprema

Ingredients for 2 people:
• A nice piece of cod
• Baby carrots with or without peas
• Bay leaves
• Vinegar
• Salt and pepper
• Flour
• Mustard
• Butter
• Floury potatoes or mashed potatoes with celeriac
• Parsley

Gently cook the fish in water with vinegar and bay leaves, keeping it on low heat.
Boil the potatoes and vegetables. In the meantime, keep the fish warm in the oven if necessary.
Melt the butter in a pan and stir in the flour until the sauce thickens.
Add the zest of the fish and mustard to taste and mix well. Your sauce is ready.
Put your butter sauce on the plate and add the fish.
Place the potatoes, the carrots and… cover all with some more sauce!

Upozorenje: Može izazvati veliku ovisnost, posebno uz dobro svježe pivo!
Iako očito neki ljudi radije ga kušaju uz čašu vina…

Priprema

800 gr. fileta bakalara (direktno od ribarnice)
500 gr. luka
250 gr. nasjeckane šunke
Ulje repice
krušne mrvice
sol
2 jaja
I krumpira koliko god želite!

Operite filete bakalara i, ako ih ima, uklonite preostale kosti. Lagano posolite i ostavite da odstoji oko 15 minuta…
Ogulite luk i narežite ga na tanke ploške.
Operite krumpir i stavite ga u lonac, prelijte vodom i zakuhajte (zagrijavajte na razini 3). Kuhajte ga na smanjenoj vatri dok ne bude gotov.
Pirjajte krumpir u loncu s uljem repice i nasjeckanom šunkom. Dodajte luk i pirjajte sve 5 minuta s otvorenim poklopcem, a zatim nastavite pirjati sa zatvorenim poklopcem na laganoj vatri. Začinite solju i paprom.
U tavu s neprianjajućim dnom ulijte malo ulja od repice i zagrijte (na razini 3).
Razbijte jaja u zdjeli i promiješajte. Dodajte malo soli.
Rasporedite krušne mrvice po papiru za pečenje.
Stavite file bakalara u jaje, uvaljajte ga u krušne mrvice, a zatim ga stavite u tavu (zagrijte na razini 2).
Važno: stavite pohanu stranu prema dolje. Strpljenje je ključno! Prije okretanja pričekajte da prva strana postane zlatnožuta.
Stavite file bakalara s krumpirom na tanjur i preko krumpira dodajte pirjani luk (začinite po ukusu).
