Preparation

Ingredients for 4 people:

• 1,2 Kg of moray cut in slices

• 1,2 Kg of onions

• Olive Oil

• 1/2 glass of vinegar

• 2/3 spoons of sugar

• Salt and pepper to taste

Cut the moray in slices, discarding the last part of the tail.
Salt to taste and put it in the fridge for one hour.
Fry the slices in boiling olive oil.
In the mean time, cut your onions in thin slices and, in other pan, let them slowly brown in oil.
Once they are cooked, add some salt, sugar and vinegar and let them caramelize.
Put your fried moray in an oven pan and cover it with the onions.
Let it stand and serve cold…with a glass of wine !

Ingredients for 4 people

Preparation

Ingredients for 4 people:
• One octopus
• One pound of potatoes
• Paprika
• One onion
• Salt
• Extra virgin oil

Wash and peel the potatoes, cut them in halves and put them aside.
Fill a pot with water, peel the whole onion, put it in the water and bring to boil.
Take your locally-caught octopus and boil it for around 45 minutes over medium heat. Prick it from time to time to check how hard it is.
When the octopus is done, remove from the boiling water, place in a platter and let it cool.
Add the potatoes to that same boiling water (so that it takes the flavour of the octopus) and boil for another 15 minutes.
Use some scissors or a sharpen knife to cut the legs and head of the octopus in small pieces.
Place the potatoes on a wooden platter and the octopus on top of the potatoes.
Finally, add a pinch of sea salt, paprika, and a splash of olive oil!

In The Netherlands, cod covered in mustard Hollandaise sauce with floury potatoes and carrots is the traditional dish on Fridays.

The reason is simple: cook fresh cod and put creativity at good use!

Preparation

Ingredients for 2 people:
• A nice piece of cod
• Baby carrots with or without peas
• Bay leaves
• Vinegar
• Salt and pepper
• Flour
• Mustard
• Butter
• Floury potatoes or mashed potatoes with celeriac
• Parsley

Gently cook the fish in water with vinegar and bay leaves, keeping it on low heat.
Boil the potatoes and vegetables. In the meantime, keep the fish warm in the oven if necessary.
Melt the butter in a pan and stir in the flour until the sauce thickens.
Add the zest of the fish and mustard to taste and mix well. Your sauce is ready.
Put your butter sauce on the plate and add the fish.
Place the potatoes, the carrots and… cover all with some more sauce!

Fried cod fillet with potatoes and braised onions

Fried cod fillet with potatoes and braised onions

Warning: Can be highly addictive, especially with a good fresh beer!
Although apparently some people prefer to taste it with a glass of wine…

Ingredients for 4 people

Preparation

800 gr. of Cod fillet (directly from the fishmonger)
500 gr. of onions
250 gr. of diced ham
Rapeseed oil
breadcrumbs
salt
2 eggs
And as many potatoes as you wish!

Wash your fillets of cod and, if there are any, remove the remaining bones. Salt lightly and let stand for about 15 minutes…
Peel the onions and cut it in thin slices.
Wash the potatoes and place them in a saucepan, fill with water and bring to the boil (heat at level 3). Keep them cooking at a reduced heat until they are ready.
Braise the potatoes in a pot with rapeseed oil and diced ham. Add the onions and make the whole braise for 5 minutes with the lid open, then continue to stew with the lid closed on low heat. Season with salt and pepper.
In a nonstick pan, pour some rapeseed oil and heat (at level 3).
Break the eggs in a bowl and stir. Add a little salt.
Spread the breadcrumbs on the baking paper.
Put your fillet of cod in the egg, roll it in the breadcrumbs and then put it in the pan (heat at level 2).
Important: put the flat breaded side down. Patience is the key! Before turning it, wait until the first side becomes golden yellow.
Place your fillet of cod with the potatoes on a plate and add the braised onions over the potatoes (seasoning according to taste).
