HERRINGS WITH MAYONNAISE

Ingredients for 2 people

Preparation

Ingredients for 2 people:
• 5 salted herring flaps
• 8-10 onions
• 1 jar (half liter) of Polish mayonnaise
• 1 spoon of spicy Russian mustard
• juice of half a lemon
• salt

For the marination:

• 3 glasses of water
• 3 grains of allspice
• 4 peppercorns
• 1/4 glass of vinegar (10 % of the total)
• 1 bay leaf
• 1 spoon of sugar

Cut your onions in thin rings, add half glass of sugar and one tea spoon of salt, mix it and let it stand covered for 8-9 hours.
Put the herrings into the bowl of water and let stand for about 2 hours, then change your water with some fresh one and let it stand another 2 hours.
The next step is to soak the herrings in your marinade for about 10 hours. The marinade is composed by: 3 glasses of water 1/4 glass of vinegar, grains allspice peppercorns,bay leaf .
At the same time cut your onions into thin slashes, add about half glass of sugar and 1 little tea spoon of salt, leave it for 10h .
Afterwards, drain your herrings, cut it into pieces of 2cm ,add your rings of onions, 1 jar of mayonnaise, 2 spoons of sour cream, one pinch of salt, 3 spoons of sugar, mustard, lemon juice and pepper.

Fried cod fillet with potatoes and braised onions

Warning: Can be highly addictive, especially with a good fresh beer!
Although apparently some people prefer to taste it with a glass of wine…

Ingredients for 4 people

Preparation

800 gr. of Cod fillet (directly from the fishmonger)
500 gr. of onions
250 gr. of diced ham
Rapeseed oil
breadcrumbs
salt
2 eggs
And as many potatoes as you wish!

Wash your fillets of cod and, if there are any, remove the remaining bones. Salt lightly and let stand for about 15 minutes…
Peel the onions and cut it in thin slices.
Wash the potatoes and place them in a saucepan, fill with water and bring to the boil (heat at level 3). Keep them cooking at a reduced heat until they are ready.
Braise the potatoes in a pot with rapeseed oil and diced ham. Add the onions and make the whole braise for 5 minutes with the lid open, then continue to stew with the lid closed on low heat. Season with salt and pepper.
In a nonstick pan, pour some rapeseed oil and heat (at level 3).
Break the eggs in a bowl and stir. Add a little salt.
Spread the breadcrumbs on the baking paper.
Put your fillet of cod in the egg, roll it in the breadcrumbs and then put it in the pan (heat at level 2).
Important: put the flat breaded side down. Patience is the key! Before turning it, wait until the first side becomes golden yellow.
Place your fillet of cod with the potatoes on a plate and add the braised onions over the potatoes (seasoning according to taste).
