Dreaming of the Sicily’s views and aromas: crispy moray with a fresh and local straw wine…

… to feel the beauty of the Mediterranean Sea a little closer !

 

Ingredients for 4 people
  • Ingredients for 4 people
  • Preparation

Ingredients for 4 people:

•  1,2 Kg of moray cut in slices

•  1,2 Kg of onions

•  Olive Oil

•  1/2 glass of vinegar

•  2/3 spoons of sugar

•  Salt and pepper to taste

 

  • Cut the moray in slices, discarding the last part of the tail.

  • Salt to taste and put it in the fridge for one hour.

  • Fry the slices in boiling olive oil.

  •  In the mean time, cut your onions in thin slices and, in other pan, let them slowly brown in oil.

  • Once they are cooked, add some salt, sugar and vinegar and let them caramelize.

  •  Put your fried moray in an oven pan and cover it with the onions.

  •  Let it stand and serve cold… with a glass of wine!
