U tu svrhu odlu\u010dili su promijeniti na\u010din prodaje svog ulova, odmaknuv\u0161i se od trenutnog modela ribarnica i aukcija te prodaju\u0107i izravno bez posrednika, sklapaju\u0107i ugovore s krajnjim kupcima po fiksnoj cijeni po sezoni. S druge strane, Empesca&#039;t je brend koji jam\u010di dodanu vrijednost svojih proizvoda, a koju sami reguliraju, upravljaju i certificiraju.<\/p>\n<p>Bilo je nekoliko godina zajedni\u010dkog rada kroz projekte kao \u0161to su <em>Synepesca <\/em>a sada i Foodnected, interne rasprave me\u0111u ribarima, razmjena iskustava radi posjeta inspirativnim modelima u drugim zemljama poput Goliona (koji predvodi <em>Syndicat Petit Metier d&#039;Occitanie)<\/em>, sastanci s upravom, papirologija i razni napori\u2026 uz odlazak na ribolov! U posljednjih nekoliko mjeseci radilo se na uklju\u010divanju restorana i poljoprivrednih zajednica u tom podru\u010dju, koji se ne smatraju klijentima ve\u0107 suradnicima jer dijele iste vrijednosti i transformiraju\u0107u viziju trenutnog prehrambenog sustava.<\/p>\n<p>Marta Cavalle, mediteranska koordinatorica programa LIFE, nedavno je intervjuirala jednog od ribara koji stoje iza ovog projekta, Isaaca Moyu, kako bi drugi \u010dlanovi programa LIFE saznali vi\u0161e o njemu i o Empesca&#039;tu.<\/p>\n<p><strong>Isaac, ti si mladi ribar s odre\u0111enom pozadinom. Reci nam ne\u0161to o sebi, svojoj karijeri i kako si postao ribar. <\/strong><\/p>\n<p>Imam 37 godina. Postao sam ribar zbog interesa koji sam oduvijek imao za more. Moj djed je imao dobar odnos s ribarima, imao je brod i znao je i\u0107i u ribolov kako bi donio ribu ku\u0107i. Uvijek sam i\u0161ao s njim i to mi se jako svidjelo. Jednog dana pomislio sam: \u201cAko voli\u0161 more, \u017eivotinje i kontakt s okoli\u0161em... postani ribar!\u201d<\/p>\n<p>Tako sam se po\u010deo pitati kako se to mo\u017ee postati, dao sam otkaz i oti\u0161ao studirati dvije godine u l&#039;Ametlla de Mar 2007. Nakon \u0161to zavr\u0161ite \u0161kolu, jo\u0161 uvijek morate biti na brodu dvije godine kako biste potvrdili titulu i postali skiper, pa sam se morao ukrcati na tri razli\u010dita broda: jedan u San Feliu de Guixolsu, love\u0107i tunu i sabljarku povr\u0161inskim parangalom, a dva druga pridnenim parangalom. Bilo je jako te\u0161ko, nije imalo nikakve veze s odlaskom na ribolov s djedovim malim brodom.<\/p>\n<p>Nakon dvije godine dobio sam titulu skipera, ali nisam imao ni lipe, a trebao sam kupiti brod koji vrijedi izme\u0111u 30 i 40 000 eura, pa sam radio kao skiper na \u010darter jahti, koliko mi je titula to dopu\u0161tala, dok nisam skupio dovoljno novca za kupnju prvog broda za ribolov. Bio je to jako stari brod, ostavljao sam ga izvan vode kod ro\u0111aka i popravljao ga tijekom zime. Zatim sam po\u010deo loviti ribu zimi i mo\u017eda 7 godina kasnije vidio sam da sam sposoban i da imam ne\u0161to novca, te sam odlu\u010dio posvetiti se ribolovu 100%.<\/p>\n<p>Ribolov mi je probudio ve\u0107i interes i po\u010deo sam raditi na drugim projektima poput projekta Sepia, zatim smo po\u010deli sura\u0111ivati s LIFE-om, osnovali smo udrugu <em>Arts Menors Costa Brava <\/em>i u projektima poput Synepesce ili sada Foodnecteda. I od tamo\u2026 znate\u2026 rastem osobno i kao ribar.<\/p>\n<p><strong>Vjerujete li da je ribolov u va\u0161em podru\u010dju odr\u017eiv i ekolo\u0161ki prihvatljiv? Koje su mjere poduzete za potporu toj odr\u017eivosti?<\/strong><\/p>\n<p>Te\u0161ko je odgovoriti na to pitanje, ono \u0161to znam jest da smo mala skupina ribara u ovoj luci. Va\u017eno mi je da je posljednjih godina do\u0161lo do promjene mentaliteta, ljudi su u pro\u0161losti mislili da je more neiscrpno, ali stvarnost nas je postavila na svoje mjesto, znamo da su resursi ograni\u010deni. To nam je otvorilo umove za promjenu ribolovnog napora i dovelo nas do provedbe projekata i mjera za pobolj\u0161anje ribolova i stanja resursa, poput projekta Sepia i drugih.<\/p>\n<p>Tako\u0111er je istina da postoje i drugi \u010dimbenici koje ne kontroliramo, poput klimatskih promjena, zaga\u0111enja\u2026 koji tako\u0111er utje\u010du na stanje mora. Rijeke vi\u0161e ne donose toliko vode i hranjivih tvari kao nekada. Lov \u0161koljki nestao je s ovog podru\u010dja, postoje mnoge promjene koje se ne mogu objasniti samo prekomjernim iskori\u0161tavanjem. Stariji su ti koji to najvi\u0161e primje\u0107uju, ne lovimo ni desetinu onoga \u0161to su oni nekad lovili. Ako nastavimo ovim tempom, nitko se ne\u0107e povu\u0107i iz ribolova.<\/p>\n<p><strong>Nekoliko puta si mi rekao da postoje razli\u010diti na\u010dini da se postane ribar\u2026. <\/strong><\/p>\n<p>Kad sam po\u010deo, nisam znao kako pristupiti poslovnom projektu. Jedan od mogu\u0107ih na\u010dina bio bi ulaganje u vi\u0161e mre\u017ea, vi\u0161e udica, vi\u0161e ribolovnog napora, jer je ina\u010de te\u0161ko spojiti kraj s krajem. Postoje tjedni kada mo\u017eete fakturirati 3000 \u20ac, ali to nije normalno, a ponekad ne mo\u017eemo i\u0107i u ribolov tjednima. \u0160to se mene ti\u010de, ako zaradim 1000 \u20ac neto mjese\u010dno, sretan sam. Ima ljudi koji \u0107e zaraditi vi\u0161e, ali ne mogu biti siguran da se strogo pridr\u017eavaju pravila. Ne \u017eelim biti ilegalan, pa, budu\u0107i da vidim da ekstraktivni sustav ne mo\u017ee i\u0107i dalje, ono \u0161to sada tra\u017eim jest posti\u0107i ve\u0107i prinos po ulovu i zato smo ga i osnovali. <strong>Empescat\u2019<\/strong>, u nadi da \u0107e mo\u0107i posti\u0107i 15 do 20% ve\u0107i ekonomski prinos.<\/p>\n<p><strong>Objasnite nam \u0161to je Empesca&#039;t?<\/strong><\/p>\n<p>\u201cEmpesca&#039;t\u201d je kvalitetna marka za na\u0161e proizvode, regulirana, upravljana i certificirana od strane na\u0161eg udru\u017eenja <em>Arts Menors Costa Brava<\/em>. Ovaj smo brend stvorili kako bismo dali ime onome \u0161to radimo svaki dan s na\u0161im na\u010dinom ribolova, koriste\u0107i razli\u010dite pasivne alate sezonski, po\u0161tuju\u0107i zatvaranja, minimalne veli\u010dine ili ograni\u010denja napora te promi\u010du\u0107i dobre ribolovne prakse i sudjelovanje u projektima. Temeljna os je kvaliteta i odr\u017eivost, poznajemo stanje mora i \u017eeljeli smo tu dodanu vrijednost donijeti u ruke potro\u0161a\u010da koji je cijeni.<br \/>\nS druge strane, poslu\u017eujemo ribu bez posrednika, izravno po fer cijeni za nas i s ve\u0107om transparentno\u0161\u0107u za potro\u0161a\u010de.<\/p>\n<p><strong>Recite nam ne\u0161to o ovoj izravnoj i dostojanstvenoj prodaji, po \u010demu se model Empesca&#039;t razlikuje od trenutnog modela u Kataloniji?<\/strong><\/p>\n<p>Model uspostavljen ovdje u Kataloniji je model ribarnice i silazne aukcije. Izravni marketing je zabranjen. Do sada smo obi\u010dno donosili ribu iz luke na ribarnicu, 40 km od na\u0161e ku\u0107e, gdje se generirala aukcijska prodaja gdje su veletrgovci kupovali po cijeni koja je padala. Cijene koje smo dobivali bile su vrlo niske i nestabilne. S Empesca&#039;tom smo \u017eeljeli dati pristojnu cijenu brodovima udruge, kupujemo vlastitu ribu putem tvrtke ribara koju smo osnovali i putem ugovora o hrani. To je ugovor izme\u0111u broda i na\u0161e tvrtke ribara gdje su fiksne cijene odre\u0111ene prema vrsti i veli\u010dini po sezoni. Cijene je odredila cijela udruga. Uprava nam je dopustila da provedemo pilot test u tom smislu i mo\u017eemo obaviti prvu prodaju u na\u0161oj luci na ugovorni na\u010din i legalan na\u010din.<\/p>\n<p><strong>Na kraju, je li put naprijed za same ribare-obrtnike da plasiraju vlastitu ribu na tr\u017ei\u0161te i odre\u0111uju cijene?<\/strong><\/p>\n<p>Razumijem da industrijski ribolov, koji dnevno nosi mnogo kilograma u luku, treba strukturu, centraliziranu prodaju, kamione koji idu posvuda itd., i sustav bi im mogao funkcionirati. Ali obrtni\u010dki ribolov, na kraju krajeva, su mali brodovi s samo jednom osobom koji prevoze 10-15 kilograma ribe dnevno. Gubi svaki smisao kru\u017eiti istim putem kao onaj koji prevozi minimalno 200 ili 300 kilograma, a da se ne mo\u017eemo razlikovati od njih.<br \/>\nNadamo se da \u0107e ova inicijativa poslu\u017eiti kao pokazivanje drugim ribarskim zajednicama s istim pote\u0161ko\u0107ama mogu\u0107eg alternativnog puta naprijed. I ovaj pilotni test postat \u0107e ne\u0161to \u0161to sve male ribarske zajednice u Kataloniji kojima je to potrebno mogu iskoristiti.<\/p>\n<p><strong>Vi ste ribari iz L&#039;Escale i Estartita, dva mjesta gdje nema ribarnice. To je jedan od klju\u010dnih faktora koji vas je naveo da izgradite ovaj model, zar ne?<\/strong><\/p>\n<p>To\u010dno, nije imalo puno smisla da riba koja se lovi u l&#039;Estartitu u 11 sati ide u Palamos, s 40 km do tamo i 40 km natrag; a restoran, koji je 100 m od broda, tako\u0111er putuje istih 80 km da bi je dohvatio. Barem je ova riba pre\u0161la 160 km na le\u0111ima kada je mogla imati 100 m i mogla se distribuirati biciklom.<\/p>\n<p><strong>Je li to uobi\u010dajena riba koju \u0107emo na\u0107i u Empesca&#039;tu ili \u0107ete prodavati i druge vrste ribe koje mo\u017eda nisu toliko poznate \u0161iroj javnosti?<\/strong><\/p>\n<p>Da, tu se suo\u010davamo s vrlo va\u017enim izazovom. Najpoznatije vrste nam se uzimaju iz ruku (brancin, zubatac, orada, grdobina itd.), ali postoji i mnogo vrsta riba koje lovimo, a za njima nema potra\u017enje. Njihovo odvo\u0111enje na aukciju rezultira prodajom po vrlo niskim cijenama ili \u010dak povla\u010denjem jer ih nitko nije kupio. Stoga smo pro\u0161li tjedan poslu\u017eili 6 kilograma murina u restoranu \u201cCeller de Can Roca\u201d, objasnili smo im problem, da je to vrsta za koju vjerujemo da raste s klimatskim promjenama, ali, me\u0111utim, nemamo cijenu na tr\u017ei\u0161tu. Prihvatili su izazov i razvijaju neke recepte kako bismo nau\u010dili jesti murinu i konzumirati je. Druge vrste mogu biti zvjezdasta ra\u017ea, cipli, veliki pauk, atlantski zvjezdast itd. Sve su one, ako su dobro kuhane, vrlo dobre!<\/p>\n<p><strong>Izgradnja zajednice suradnika koji razumiju i dijele filozofiju klju\u010d je uspjeha modela, zar ne?<\/strong><\/p>\n<p>Ideja iza toga je dati vrijednost lokalnom proizvodu, ulovljenom na zanatski i odr\u017eiv na\u010din. Tra\u017eili smo restorane ili poljoprivredne programe koje podr\u017eava zajednica, koji razumiju na\u0161u filozofiju, dijele je i cijene kvalitetu proizvoda koji im mo\u017eemo ponuditi. Nismo tra\u017eili samo kupce, ve\u0107 \u017eelimo da ti ljudi preuzmu projekt i prenesu na\u0161e vrijednosti i na\u010din na koji ribarimo potro\u0161a\u010dima.<br \/>\nVrlo smo zadovoljni dosada\u0161njim odazivom. Zasad nismo stvarali niti htjeli stvarati previ\u0161e buke jer smo u pilot fazi, a ako imamo preveliku potra\u017enju, a nedovoljnu ponudu, to bi moglo biti kontraproduktivno. Ali jako smo sretni i ponosni, posebno vidimo vezu koja se uspostavlja s kupcima, kako u restoranima tako i u obiteljima koje podr\u017eava zajednica. Prije nismo imali takav odnos, a sada nas pitaju kako smo ulovili tu ribu i imamo otvoren dijalog s njima. Mislim da je to vrlo oboga\u0107uju\u0107e za obje strane!<\/p>\n<p><strong>Tek ste po\u010deli, kakva je vizija za budu\u0107nost?<\/strong><\/p>\n<p>Na\u0161a je ideja mo\u0107i i\u0107i u ribolov \u201cna zahtjev\u201d jer vjerujemo da je svaka riba koja nije naru\u010dena, \u0161to zna\u010di da je nitko ne \u017eeli, bolja ako je u moru nego u kanti po cijeloj zemlji. To je san, iako \u0107e ga biti te\u0161ko ostvariti. Po\u010deli smo i jako smo sretni jer su izgledi dobri, krenuli smo bolje nego \u0161to smo mislili.
