In The Netherlands, cod covered in mustard Hollandaise sauce with floury potatoes and carrots is the traditional dish on Fridays.

The reason is simple: cook fresh cod and put creativity at good use!

Ingredients for 2 people
  • Ingredients for 2 people
  • Preparation

Ingredients for 2 people:
• A nice piece of cod
• Baby carrots with or without peas
• Bay leaves
• Vinegar
• Salt and pepper
• Flour
• Mustard
• Butter
• Floury potatoes or mashed potatoes with celeriac
• Parsley

  • Gently cook the fish in water with vinegar and bay leaves, keeping it on low heat.
  • Boil the potatoes and vegetables. In the meantime, keep the fish warm in the oven if necessary.
  • Melt the butter in a pan and stir in the flour until the sauce thickens.
  • Add the zest of the fish and mustard to taste and mix well. Your sauce is ready.
  • Put your butter sauce on the plate and add the fish.
  • Place the potatoes, the carrots and… cover all with some more sauce!
